Breakfast Burritos

Mornings in my house are either smooth sailing or chaotic, depending on the day and the mood the kids wake up in. I try to make my mornings as organized as possible and one of those ways is with easy breakfasts. Since my day starts at 5, there is no way I'm going to have time to cook a breakfast before leaving, so grab-n-go options are what I'm about. Breakfast burritos are my husband's favorite so I thought I would do a post about my take on them.

For this recipe, I'm starting with Mission whole wheat burritos. These are a healthier option than the regular flour ones.
I pull a few out and place them onto wax paper cut outs that I ripped up earlier. I also warm them slightly to make them easier to manipulate while rolling.

The first layer consists of shredded cheese. I'm not particular about which type so any that you have will work.
Next is my egg mixture. I scrambled eggs with bell peppers, onions, and mushrooms and seasoned with a little Ms. Dash.
Then comes the bacon, because bacon makes everything better right?
Once everything is assembled - and you add any ingredients you want - you want to start rolling. I roll it right on top of the wax paper
Then you want to grab a corner and roll the whole thing up in the wax paper. I use wax paper as a protective layer for the fridge or freezer.
Here's the rolled burrito. The good thing about wax paper is that you can put the whole burrito in there without fear of the paper melting. How awesome is that?
If they are going to be eaten in the next day, I usually load them into a large ziploc bag for storing.
If its going to be a few days, definitely roll them with aluminum foil and put into a ziploc bag before storing in the freezer. This will eliminate chances of freezer burn.

And there you have it! A quick and easy breakfast for a busy day.
