Dinner at 7: Roasted Veggies with Sausage

Roasted Veggies with Sausage
This week was off to rough start after a long weekend but I still wanted to cook something healthy and filling for the week. A blogger that I follow, Trina of The Baby Shophalic, does this same dish but in a skillet. I decided to give it a try but opted for the oven instead since I was too busy chasing my two year old around the house.

The recipe is simple: use any and all veggies available; cut in large pieces, toss in olive oil, salt and pepper; roast in the oven. That's it. I added sausage in towards the end of cooking to add some flavor and extra protein. I didn't add any olive oil to it since I was using Hillshire Farm's Beef Sausage and it makes it own oil. For a little bit of a nice surprise, I added some parmesan cheese on top as a bonus flavor.

This meal is husband-approved because there was none left the next day. He did make mention that the green beans "got in the way" (LOL), which I figured might happen since they are a little bitter. Other than that, he loved it and I will be trying some other variations of it.
