Lunch at Noon: Roasted Chicken and Veggies

Hubby and I are participating in the 30-day Fitness Challenge hosted by Mr. Shut Up and Train, Ray Grayson. This thing is no joke. I've done the challenge several times but this is the first my husband is doing it too so I'm excited.

I'm in charge of meals for us so I whipped up something simple yet filling in the form of roasted chicken things, fresh green beans and squash. He may be craving a burger at lunch tomorrow while eating this but it should sustain him until snack time.

A healthy quick lunch meal
This meal took all of 30 minutes to prepare. I had a huge pack of chicken thigh the other week and seasoned them all up and put them into ziplock bags for freezing. I popped them out and put them straight into the oven for roasting (after they thawed, of course). The green beans were simple - a little olive oil and a little water in a super hot skillet. Season with a little garlic salt and bam! You're done! My squash followed the same recipe of green beans except I added onions. It looks and smells amazing and I'm sure it will taste amazing too.
