Roasted Veggies with Sausage

This week was off to rough start after a long weekend but I still wanted to cook something healthy and filling for the week. A blogger that I follow, Trina of The Baby Shophalic, does this same dish but in a skillet. I decided to give it a try but opted for the oven instead since I was too busy chasing my two year old around the house.

The recipe is simple: use any and all veggies available; cut in large pieces, toss in olive oil, salt and pepper; roast in the oven. That's it. I added sausage in towards the end of cooking to add some flavor and extra protein. I didn't add any olive oil to it since I was using Hillshire Farm's Beef Sausage and it makes it own oil. For a little bit of a nice surprise, I added some parmesan cheese on top as a bonus flavor.

This meal is husband-approved because there was none left the next day. He did make mention that the green beans "got in the way" (LOL), which I figured might happen since they are a little bitter. Other than that, he loved it and I will be trying some other variations of it.

Here's a list of the veggies I used:

• Broccoli
• Onions
• Carrots
• Zucchini
• Squash
• Green Beans
• Red Bell Peppers
• Green Bell Peppers
• Snow Peas

This was a hit! He said it was really good and packed a lot of flavor. And honestly, it took less than 45 minutes to prepare. I'm planning to incorporate this into our regular meals in the coming weeks. So if you're looking for something quick and easy, give this a try!



 Directions:

• Wash and dry 5-7 chicken thighs (or whatever cut of meat you like).
• Season with salt, pepper, Ms. Dash, and Italian seasoning; add diced onions.
• Refrigerate for an hour.
• In a skillet, sauté the chicken thighs in olive oil until browned and cooked through. Move a plate to rest. 
• Add a teaspoon of minced garlic. 
• Add a can of diced tomatoes, drained
• Saute together until soft.
• Add the chicken parm sauce and simmer low. 
• Add the chicken back to the skillet and cover. 
• Simmer for 15 minutes, stirring and turning the chicken. 
• Simmer for another 15 minutes and serve over pasta.
